Gentle conveying of mayonnaise salad

 

 

Mayonnaise salad is traditionally found on party buffet tables or, fresh from the chiller, makes a hearty addition for lunch or dinner. Thanks to the gentle conveying by WANGEN PUMPEN twin screw pumps, even delicate peas or diced carrot remain appetising and firm to the bite in its manufacture. We are currently running a test phase to ensure that the mayonnaise salad can be gently pumped by the series 104 twin screw pump.

WANGEN PUMPEN series 104 twin screw pumps feature a sufficient spindle gradient to prevent the product becoming squashed between the edges of the spindle. Together with the food producer, we are testing the pump with a salad containing peas, diced gherkins and carrots, bound together with mayonnaise. The aim is to convey the salad without changing its texture – so that it looks and tastes almost home-made. After all, the appearance of the salad would be impaired if the vegetables were to be squashed. The mayonnaise would take on an unattractive colour as colouring could be released by the crushed vegetables.

The challenge: gentle pressure for gentle vegetables

In the test, the mayonnaise salad is conveyed to the pump through the vertical spigot on the pump housing and then through a hopper. The combination of gravity and the plug screw feeder in the hopper ensures an even feed. A DN50 hose with a DN50 outlet valve are fitted to the horizontal discharge flange. No pressure measurements are taken on the pump itself, as the theoretical calculated pressure losses in the connected hose and outlet valve are known in advance.

Practical test: WANGEN PUMPEN twin screw pump

Twin screw pumps feature cells between the edges of the spindle and the pump housing that "shift" from the suction to the pressure side due to the counter-rotational movement of the spindles. As there is no change of volume in these cells, the mayonnaise salad is transported especially gently. After pumping, the testers rinse off the mayonnaise with water to evaluate the shape of the vegetables. The result: at all three pumping rates, the required size and form of the vegetables is retained. This delicate salad can therefore be economically pumped by WANGEN PUMPEN twin screw pumps without any loss of quality.

In short: WANGEN PUMPEN twin screw pumps have been proven to be very suitable for use in the food industry. The tested pump manages to balance cost-effective production with the high quality standards of the product: the vegetables are not squashed even at high pump speeds, the pieces remain whole, and the salad looks appetising after being pumped – almost like home-made.
